Gluten-free baking requires come alteration to recipes and preparation. Breads are best on the first day when they are warm or they can be toasted on later days. To accomplish a good texture in breads you can buy xanthan gum, guar gum and gelatin. These prevent crumbling of baked goods. Eggs are useful both as a binder and to help baked goods rise (leaven).
Invest in a small coffee grinder to grind up various flours, rice, flax, nuts, or seeds for your recipes.
