What is it? |

| When VITAMINS and MINERALS and are lost in processing, then those same nutrients put back in to restore food to its original nutritive level, that food is, by government definition, enriched. But when the added vitamins and minerals boost the nutritive value beyond that of the original, the food is fortified. Prime examples: milks and margarines fortified with vitamins VITAMIN A and D , fruit drinks with VITAMIN C, soy milk with CALCIUM and VITAMIN B12 , even SALT with IODINE . The most highly fortified foods now available are breakfast cereals, some of which supply a day's quota of certain vitamins and minerals. Note: If the nutrients have been pumped up so much they're 50 percent more than the DAILY VALUE (DVs) , the food must be sold as a SUPPLEMENT. | |
