| Once considered a NONESSENTIAL
AMINO ACID, cysteine has been upgraded to semiessential because if
there's enough of it in the diet, the body can use it in place of METHIONINE
(an essential AMINO ACID)
to make PROTEIN.
Also, two molecules of cysteine can bond, forming cystine, another amino
acid, albeit a nonessential one. Good sources of cysteine are meat,
fish, fowl, soybeans, oats and wheat. Food manufacturers use cysteine as
an ANTIOXIDANT
to safeguard the VITAMIN C. VITAMIN
C content of processed foods. And bakers mix it into doughs to speed
kneading. Cystine, on the other hand, is used as a dough strengthener as
