Polyunsaturated fatty acids are fats with a large percentage of fatty acids that lack more than one pair of hydrogen atoms. Most plants' oils are high in polyunsaturated fats. So are fish, almonds, peanuts (and peanut butter), pecans, hazelnuts and walnuts.
